Instant Pot Beef Brisket

This week on the blog is Brisket week. In the Milner kitchen we are HUGE brisket fans and love to make it in the instant pot, air fryer and slow cooker. After showing you air fryer brisket yesterday, today is all about instant pot brisket.

I remember it like it was yesterday, back in 2017 when we cooked beef brisket in the instant pot for the first time ever.

The brisket was juicy, it was so tender, and it was very hard to stop yourself from eating the brisket to yourself and not saving it and sharing it over a few meals. Sofia was a toddler then and also loved her meat and was in the kitchen tucking in with us and we were all commenting about how the instant pot was a genius gadget for what it did to brisket.

We also reheated the leftover brisket into yummy brisket sandwiches.

As we update it for you today and show you how simple it is to make instant pot brisket sliders, something occurred to me. Most people will cook instant pot brisket for a roast dinner and then the leftovers will be made into sandwiches.

However, what I like to do is make the brisket just for sandwiches and add a few sides and you have the best Saturday night family supper ever.

Though of course, if that is not you, you can skip the turning it into sliders steps and just serve up this brisket as roast beef for dinner.

Can You Cook Brisket In An Instant Pot?

Yes, you sure can. The instant pot pressure cooker and any other electric pressure cooker, does an impressive job of cooking roast beef.

It can be brisket, it can be instant pot chuck roast, it can be an instant pot frozen pot roast and so many other variations.

The only one I would suggest you don’t do is fillet. That is because its so amazing it feels like a waste of the pressure cooker.

Yes, you can. In fact, that is exactly what we are doing today. We made our Ninja Foodi Whole Chicken, had a roast chicken dinner and then the carcass of the chicken is thrown into the instant pot to make an amazing nutritious chicken bone broth.

Quick Instant Pot Brisket

This instant pot brisket recipe is one of the best quick prep instant pot recipes. I couple of minutes of prep, and you have delicious brisket prepped in the instant pot and you just come back when it beeps.

And that is what I love about the instant pot so much.

I am a mum of three and use the times when food is cooking in the instant pot (and don’t have to watch over it) to get some work done, play with the kids, tidy up the kids toys or relax.

Though many of my readers say they just like been off their feet, which sounds good to me!

Instant Pot Brisket With BBQ Sauce

I love to cook my brisket in the instant pot, let it rest, slice it up and then load it into sandwiches with barbecue sauce.

You can do the same or if you are looking for a simple instant pot brisket with bbq sauce you can just smother it in sauce once cooked.

Beef Brisket Instant Pot Recipe Ingredients

Brisket – Any size brisket will work well. Though note, that brisket does shrink when it cooks so aim for a medium size. Our brisket was 1.2kg which is just over 2.6lbs. You can also achieve a better end result with butcher brisket that is of a higher quality compared to what you buy from the supermarket.

Oil – This may sound like an odd ingredient to add to brisket especially when cooking it in the pressure cooker, but its essential. The oil is added to the outside of the brisket and not only does it help keep your brisket moist, but it also creates a glue for your seasoning to stick to.

Seasoning – Next you need the seasonings, and you can mix and match with your own preference. Start with salt and pepper and then we used garlic, sweet paprika, coriander leaves and parsley.

Then for the kitchen gadgets that we have used in this instant pot beef sliders recipe, it has just been our instant pot pressure cooker. We have this one and it is amazing for many cuts of beef.

How To Cook Brisket In Instant Pot?

  • Score. Slice your beef brisket like you are getting ready to play noughts and crosses. Not going all the way in, before enough so that the seasoning will go into the centre of your brisket.
  • Season. Place your brisket into a baking tray as they are easiest for prepping. Then spray with extra virgin olive oil and then sprinkle with seasonings. If any seasoning falls off simply roll the brisket in the baking tray until fully coated.
  • Dump. Place a cup of either water or beef stock into the instant pot, then add the trivet and then place the brisket onto it.
  • Cook. Set the valve to sealing and pressure cook for 40 minutes, followed by a 15 minute natural pressure release.
  • Sit. After releasing the last bit of pressure, remove the brisket and allow to sit for 5 minutes before slicing.

How To Make A Brisket Sandwich?

If you want to make a brisket sandwich, simply slice your beef brisket and then load into buttered bread rolls. Add the roast beef and then smoother in barbecue sauce.

Instant Pot BBQ Brisket

If you don’t want a beef brisket sandwich, then my Plan B is perfect for you and is the best instant pot BBQ brisket that you will ever try and is a simple variation on instant pot brisket sliders.

Firstly, I called this my ugly instant pot bbq brisket. That is because I used a beef brisket that had heavy items sat over it in the freezer and had become broken and didn’t look like brisket that would be in prime position on the dining table.

It also didn’t have the best colour on it because it had been partly defrosted and then looked a little rough. A bit like my teenager on a Sunday morning when asked to get up before 9am!

But I used my ugly beef brisket to my advantage.

This is because it wasn’t rolled as tight, I was able to pour barbecue sauce into its centre and enhance the flavour as it pressure cooked.

Then you season it and oil it like you would do with our main recipe for instant pot brisket.

Then instead of a 40 minute cook time, go with an hour then it will be cooked enough to shred.

Next, add barbecue sauce and you have yummy pulled barbecue brisket.

How Long To Cook Brisket In Instant Pot?

The recommended cook time for this beef brisket instant pot recipe is 40 minutes. If you go over this, you will often end up with beef brisket that has been pressure cooked for too long and it will be too difficult to slice.

However, if you want to make pulled beef brisket you can increase the cook time to an hour and then it will be easy to shred.

Though, don’t go over an hour as it will become dry and will not be the amazing beef brisket you were hoping for.

  • Place your brisket in a baking tray and score the brisket like you are getting ready for a game of noughts and crosses. Go deep enough for the seasonings to go into the centre of the brisket.

  • Smoother the brisket with extra virgin olive oil and then coat in the seasonings. Roll in the baking tray until all seasonings are on the brisket and none are falling off.

  • Place a cup (240ml) of water into the instant pot, add the trivet and then place the brisket on the trivet.

  • Place the lid on the instant pot, set the valve to sealing and cook for 40 minutes on manual/pressure cook and follow this up with a 15 minute natural pressure release before releasing the rest of the pressure.

  • Place the brisket on a chopping board and allow to rest for 5 minutes.

  • Then remove the string and slice.

  • Load into bread rolls and smoother in barbecue sauce.

  • For pulled brisket cook for 60 minutes instead and then pull apart with meat claws when cool, toss in barbecue sauce and serve.

Notes

Freezing. If you would like to freeze your leftover brisket, load into a zip loc bag once cool and then place into the freezer.

Choice. The best thing about this brisket recipe is choice. You can stop at step 6 and have a delicious roast brisket recipe for a Sunday roast, you can do step 7 and make sliders or do step 8 and make pulled brisket.
